When it comes to autumn time, I always love to bake at home and make something from scratch. The past few weeks I’ve been treating Jonas with my traditional Lithuanian Apple Pie, but this weekend I decided to do something a bit different. I made a Pear and Plum Bundt Cake, that both of us absolutely loved. So autumnal, especially with the mix of spices I added in. If you want to try and make this easy cake that only takes a few steps, then check out the recipe below!
Ingredients:
4 plums
3 pears
250 grams butter unsalted
3/4 cup caster sugar
pinch of salt
1 tsp vanilla extract
6 eggs
2 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1 1/2 tsp baking powder
2 cup flour
Procedures:
1. Dice up the plums and pears, set aside.
2. Melt butter on medium-low heat and mix in with sugar. Add the eggs, vanilla and pinch of salt.
3. Add flour, baking powder and spices to the mixture and mix thoroughly. Then add in the pears and plums, mixing with a spatula to coat evenly.
4. Pour the batter in a non-stick bundt pan lightly greased with oil or butter. Bake at 180 degrees C for 50-60 minutes, or until lightly golden and when you insert a toothpick into the center it comes out clean. Let it cool for about an hour and enjoy!
