Recipe: Quick and Healthy Banana Pancakes

Good morning! I’ve got several pancake recipes on my blog, which you can check out here, but today I made a bit of a different recipe and I think it turned out incredible! The pancakes were really nice and fluffy and super yummy! It’s a really quick recipe which only calls for a handful of ingredients and a blender! Hope you enjoy! Xx

Recipe: Makes 7-8 pancakes 

Ingredients:

1 banana

2 eggs

6 tbsp oats

2 tbsp flour

1 tsp baking powder

1/4 cup water

knob of butter

Procedure:

1. Add all the ingredients to a mixer or blender and blend until smooth – if the batter is a bit too runny, add a bit more flour, but you want it to look like a usual pancake batter.

2. Heat a pan on medium-high and add a knob of butter- pour some batter in the middle of the pan and cook for a minute or two on each side (this may vary between different hobs).

3. Enjoy with your favorite toppings- outs is maple syrup and berries!
