This was my first ever attempt at Bircher Muesli and I think it went kind of great! It’s super simple, very light, full of goodness and easy to make – just prep it the night before, leave it in the fridge overnight and you have a hearty and healthy breakfast to enjoy the next morning! I’ll keep playing with this recipe and see what other combinations I think of, but this is just one I put together from the things we had in the cupboard and I liked it a lot! I hope you enjoy! Xx
Recipe: serves 2
Ingredients:
3/4 cup oats
1 tbsp chopped nuts
1 tbsp dried goji berries
1 teaspoon chia seeds
1 apple of your choice, grates (I enjoy Braeburn or Pink Lady)
1 heaping tbsp greek yogurt
1 cup of milk
Procedure:
1. Place all the dry ingredients in a bowl and mix. Then add the greek yogurt and milk – and mix until fully incorporated.
2. Cover with cling-film and place in the fridge overnight.
3. Following morning- take it out of the fridge, mix the muesli once more and divide into 2 portions. Sprinkle with a topping of your choice if you like (I added pomegranate seeds) and enjoy!
