Recipe: Simple Summer Salad

Hi guys! I love salads in the summer, especially for lunch or as a side at dinner time. One of my go-to favorites is this simple salad that I always make when I stock up on fresh veg from the Guildford market on the weekends! Even if you don’t have a market nearby, you can use store bought veg as well if you fancy!

It’s healthy, delicious and very light- perfect on a hot summer’s day!

Recipe: Serves one

Ingredients:

1 cup rocket leaves

1/2 cup cucumber

1/3 cup sweetcorn

1/3 cup avocado

1/2 cup tomatoes

olive oil

balsamic vinaigrette

1 tsp salt

1 tsp cayenne powder

Procedures:

1. Wash and tear up the rocket leaves.

2. Dice the cucumber, avocado and tomatoes and top the rocket leaves. Add the sweetcorn as well.

3. Sprinkle the salt and cayenne and top off with olive oil and balsamic vinaigrette to taste.
