This morning I slept in a bit and worked on my dissertation and a presentation I have to give about my placement last year whilst still lying in my bed so I decided to make breakfast from whatever I could find in my kitchen- so I made this smoothie bowl. It was really simple and actually quite good, I just seemed to not have an appetite so only had about 1/2 of it. I used frozen blueberries, raspberries, almond milk, peanut butter and chia seeds. Once I blended it up – I topped it off with some dried cranberries, oats, more raspberries and a teaspoon of peanut butter. It was really good and invigorating! I also had some water and some green tea while I worked in bed for a couple of hours and watched some youtube videos in between as I felt like I needed a break since I felt like I was starting to get some kind of cold!
During lunch I went to University to work for a couple of hours on writing up lecture notes and picked up some tomato-basil soup with a side of coleslaw. Sorry for the unappealing photo though! The soup was delicious and the coleslaw was really nice as well, but I did not end up finishing the coleslaw purely because of the massive portion! It was delicious though!
For dinner I went to Carluccios in town with one of my best friends and enjoyed a lovely glass of prosecco while I waited for my meal. I wasn’t feeling all that hungry today so just got a caprese salad and calamari as my main although they were starters and finished the meal off with the delicious passionfruit meringue with raspberry sauce and some english breakfast tea. It was so delicious and filling!
I felt a bit under the weather throughout the whole day so this feast was so nice and a lovely treat! I’m now in bed, snuggled up with a million blankets sipping on some more green tea as I write this up!
