For a quick and simple nachos recipe, why not try this? It only takes about 20 minutes and is super delicious! Although it’s still a treat, I make sure to make it a bit healthier by choosing good quality low fat cheese, natural tortilla chips and use greek yogurt instead of sour cream.
Recipe: Served 4
1-2 bags of Tortilla chips – try and use healthy ones that contain lots of seeds and wholegrains or just corn
250 g grated low fat mild cheddar cheese
1 cup homemade salsa
1 cup homemade guacamole
1 cup natural greek yogurt
- Lay out 1/2 the chips flat and sprinkle half the cheese, then add the remaining of the chips and top off with cheese. Bake chips with cheese for 10-15 minutes or until the cheese has melted at 150 degree C to prevent burning.
- In the meantime – make homemade salsa and guacamole from my previous recipes or use store bought if you want to.
- Once the cheese has melted, remove the tortilla chips from the oven, dollop the salsa, guacamole and greek yogurt on top and enjoy!
