Jonas and I love sweet potatoes and we especially enjoy sweet potato fries! Now I always aim to make our meals quite healthy so I make baked sweet potato fries which we both love! I decided to finally share this simple and delicious recipe!
Recipe: Serves 2
2 large sweet potatoes
1 tsp Himalayan Pink Salt
1/4 tsp Cayenne
2 tbsp Olive Oil
- Wash and cut the sweet potatoes into thin strips that are the size of regular fries- put them onto a baking sheet or baking pan that is big enough to allow all the fries to be spread out as a single layer – this will allow them to cook evenly and become more crispy.
- Drizzle the olive oil and sprinkle himalayan pink salt and cayenne and toss with your hands to evenly coat the potatoes.
- Bake at 180 degrees C for 30-40 minutes, tossing or flipping the potatoes half-way. You’ll know they are done when they become a bit golden and you can stick a fork into the middle with a bit of resistance from the outer skin of the potato.
Let the fries cool a bit and enjoy! Great as a side dish for lunch or dinner!
