This recipe screams fall – everyone who is a fan of pumpkin spice lattes and pumpkin pie or bread will enjoy this! At least I hope! I’m trying to get better from a cold that won’t go away and a slice of this pumpkin bread plus tea makes my day brighter and more fun! Although it isn’t super healthy, a treat once in a while is always nice! I hope you try it out and enjoy!
Recipe: makes one loaf
1 cup pumpkin puree
3/4 cup sugar
3/4 cup melted butter
1 tbsp pumpkin pie spice (or a mixture of cinnamon, ginger, nutmeg)
2 cups flour
1/2 tsp baking powder
pinch of salt
- Mix the eggs, sugar, melted butter and pumpkin. Add the spices, salt, baking powder and flour – mix thoroughly.
- Pour the batter into a loaf tin and bake at 170 degrees C for 35-40 minutes.
- Take the loaf out and let cool completely – then slice and enjoy!
