Today’s recipe is one that I was a bit worried to try as the combination of tomato and tuna sounded weird to me but I can’t lie – I loved it! Jonas made this soup for me a couple of times last week and I think it is delicious and I can’t wait to buy some tuna to make this over the weekend. I hope you enjoy the recipe- you must try it out! Its packed with healthy carbs and protein and extremely lovely on a cold fall evening.
Recipe: serves 2
Ingredients:
1 can of skinless, peeled tomatoes
60 g mozzarella cheese
1 tbsp olive oil
1 tsp cayenne pepper
1 tbsp ground paprika
1 tsp himalayan pink salt (or normal salt)
3-4 cloves of garlic
4 basil leaves
2 cans of Tuna in brine
1 can of barlotti beans
Procedures:
1. Place all the ingredients (except the beans and tuna) into a food processor or blender and blend until smooth.
2. Pour contents into a pot on medium heat and add the tuna and beans – let the soup heat up and simmer slightly.
Serve and enjoy! I promise it is delicious!
