I am always thinking of new ways to make dishes with eggs as I often get bored of plain old scrambled or boiled eggs. Therefore I often opt for egg muffins (I have a veggie recipe one up on my blog) and I also love making an omlette bake for Jonas and I on the weekends every now and then. There are many types I like to make but this weekend I made one with vegetables and italian chicken sausage. I hope you enjoy this recipe but do keep in mind that you can put anything into the omelette that you want!
Recipe: Serves 4-6 people
Ingredients:
6 eggs
1/2 cup milk
1 cup chopped HECK italian chicken sausage
1/4 cup chopped red onion
1/2 cup quartered cherry tomatoes
1/2 cup chopped spinach
3/4 cup cheddar cheese
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp thyme
1/4 tsp cayenne pepper
1 tsp oregano
1/4 cup ketchup
1/2 tbsp coconut oil
Procedures:
1. Mix together the eggs, cayenne, salt, garlic powder, oregano, thyme, salt and milk.
2. Mix in all the remaining ingredients apart from the coconut oil and ketchup.
3. Take a baking tray, grease with the coconut oil and pour the omelette mixture into it. Add ketchup on top and bake at 180 C for 30 minutes or until you stick a knife into the middle of it and the knife comes out clean.
4. Let the omelette bake cool for about 10 minutes and serve 🙂
