This is the perfect light summer salad. I absolutely love arugula (thanks to my mom for introducing it to us when we were little) and have been wanting to make some salads based entirely around this wonderful leafy green. This salad is bursting with flavor and has a great combination of textures. It’s peppery from the arugula, juicy and sweet from the tomatoes, crunchy from the peppers, salty due to the parmesan and has a nice tangy kick coming from the balsamic vinegar.
2 cups arugula
1 sweet mini pepper (cut into rings)
6-8 cherry tomatoes (quartered)
Parmesan cheese (finely grated)
splash of olive oil
splash of balsamic vinegar
Just top the arugula with the remaining ingredients and serve! It’s that easy! I like it as a light dinner or lunch but also think this would be a great side salad to any grilled meats this summer.
