Recipe: My go-to Carrot cake

While I was at home my dad asked me to bake him something containing carrots- so today I’m sharing my carrot cake recipe. I mentioned it to you guys in my previous carrot cake muffins recipe but I really love this! It’s low in fat but verg moist and extremely delicious! It’s my go-to carrot cake recipe!



2.5 big carrots- grated

2 cups apple sauce

4 large eggs

1 tbsp Cinnamon

1/2 cup demerara sugar

1 tsp Salt

1/2 cup extra virgin olive oil

1 1/2 cup flour

1/2 cup whole grain flour

2 tsp baking powder


1. Mix eggs, apple sauce, carrots, oil and sugar.

2. Add flour, baking powder, salt, cinnamon.

3. Spread evenly onto a greased pan and bake in 180 degrees C for 35-40 minutes. Let cool completely before serving.
